Smoked salmon in a retort pouch, or “Flexible can” does not require refrigeration. Smoked salmon is vacuum-sealed into the retort pouch. Then the pouch receives heat processing to 250 F. Like cans the pouch may be stored on your shelf until opened. Smoked seafood in retort pouches should appear fresh and moist. The pouch should be undamaged and air tight. Reject pouches with pinholes, punctures, leaks or swelling. After opening pouch, store in refrigeration. Shelf life is about seven years. Comes in 4 oz, 8 oz, and 16 oz sizes.
